Menu Plan

I apologize that I haven't been posting my menu plans lately, but my method of planning has changed due to circumstances, and I don't always have a concrete 7 days of meals planned.  Because of our finances, and my need to be extremely frugal, I've been keeping a running list of cheap meals that I will use in the coming days.  Sometimes I wait to see what will be on sale next, or what I will find at the food bank, and then plan around that.  I'll sometimes decide for sure what to make a day or two ahead of the actual day, depending.  I'm not sure if this is making sense or not!  I used to plan meals, then shop for what I needed.  Now, I shop sales and have to use the food bank, or sometimes someone blesses us with food, then I see what I have and plan from that.  Anyway, I sketched out a rough plan of what I will be serving for dinner next week, Monday-Sunday.  I'm not totally sure what day each one will be on, but here is what I have:

Burritos
Crockpot Rice and Beans with cornbread and salad
Pasta with salad and bread
Burgers and baked beans
Shepherd's pie and salad
Salmon, potatoes, veggie, and salad
Chicken a la king with rice, biscuits

With that menu, the only items that I will have to buy is some ground beef and a pack of tortillas, and probably some more lettuce and tomatoes for salads.  Everything else, I already have in the house!

Please Stand Firm on the TRUTH!!!


I write this post with fear and trembling.  I am so saddened and terribly concerned about the state of today's church.  People, we are living in the last days.  These are the days in which there is a great falling away of the church.  Deception is sneaking in and being taught as truth, and people are accepting it.  This is scary!  Scarier still is that I am watching people that I know and love be sucked into it.

Please read this article by Answers in Genesis about the book titled "The Evolution of Adam".  This troubles me greatly.  I may not be popular for writing this post, but I am genuinely concerned for the state of the church, and I am warning people...STAND ON TRUTH!!!  Do not be swayed by all of the "scholars" out there telling you that you can't take the Bible literally, or that it needs to be re-translated, or whatever.  This is the same old deception of satan that has been going on for thousands of years, starting back at the Garden of Eden (that YES I believe literally existed)...."did God really say...???"

2 Peter 3:

14 So then, dear friends, since you are looking forward to this, make every effort to be found spotless, blameless and at peace with him. 15 Bear in mind that our Lord’s patience means salvation, just as our dear brother Paul also wrote you with the wisdom that God gave him. 16 He writes the same way in all his letters, speaking in them of these matters. His letters contain some things that are hard to understand, which ignorant and unstable people distort, as they do the other Scriptures, to their own destruction.
17 Therefore, dear friends, since you have been forewarned, be on your guard so that you may not be carried away by the error of the lawless and fall from your secure position. 18 But grow in the grace and knowledge of our Lord and Savior Jesus Christ. To him be glory both now and forever! Amen.

Isaiah 24


I am not meaning this to be a doom and gloom post by posting this chapter.  But, I am sick to death of the fact that people around me are so focused on the temporal things of this earth.  People don't understand that we don't have much time left on this earth.  So many things don't matter.  My focus is on obeying the Lord, seeking Him, readying myself for His return, and making darn sure that spiritual matters are the number one focus of what my children are learning.  Academics will not matter someday (YES, I teach academics, but unlike many they are NOT my primary focus), soccer games will disappear, careers will be over.  MAKE SURE YOU ARE OBEYING GOD'S WORD!

Isaiah 24:

Behold, the Lord makes the earth empty and makes it waste,
Distorts its surface
And scatters abroad its inhabitants.
2 And it shall be:
As with the people, so with the priest;
As with the servant, so with his master;
As with the maid, so with her mistress;
As with the buyer, so with the seller;
As with the lender, so with the borrower;
As with the creditor, so with the debtor.
3 The land shall be entirely emptied and utterly plundered,
For the Lord has spoken this word.
4 The earth mourns and fades away,
The world languishes and fades away;

Easter Menu

My Easter Menu:

  • Crock pot Ham with marmalade glaze
  • Au gratin potatoes
  • Holiday yams
  • Corn
  • Spinach salad
  • Strawberries
  • Rolls
I'm keeping it somewhat simple in order to save money.  I didn't have to spend very much to come up with this!  I had one more ham left in the freezer from our pigs, I always have potatoes and corn in the house, and I already had rolls in the freezer.  So, I just had to buy 5 yams (on sale), spinach salad ingredients, and strawberries (on sale).  I guess the spinach salad was my "splurge" because that's what I spent the most on (a little too much, but I didn't spend much on anything else!).  We are having friends from church over, and they are bringing dessert.
